Pesto is one of my favorite foods. I grow basil in pots in my backyard every year. I freeze the whole leaves and make pesto that I freeze in ice cube trays (remember ice cube trays?). It's a wonderful condiment and delicious ingredient in many recipes. I think the only way I don't use it is in desserts (although a mint pesto is a great addition to brownies). These five ways to use pesto include many delicious recipes, including Pesto Brie Bruschetta.

Sometimes you just need a steak. After a tough day or week, there's nothing more soothing (if you're a carnivore!) than a tender, juicy, perfectly cooked steak with a caramelized crust. My mouth is watering just thinking about it! If you can, splurge and buy grass-fed organic beef. Nothing tastes richer or beefier than an organic steak. Canned salmon is an excellent and nutritious ingredient to have on hand. You can use it to make so many things, from Salmon Patties or this luscious Salmon Coleslaw. I like to buy the red sockeye salmon because I think it has a richer flavor, but pink salmon is just fine. Enjoy these easy and cool recipes this week.

It's Still Too Hot to Cook 22 Jul 2010 at 8:23pm
It hasn't been really hot in Minnesota this year, but it's been very humid. One day the dewpoint was 79 degrees! That means that there's so much moisture in the air fog forms at that temperature. It felt like you were in a huge sauna. Bleh. So I really haven't felt much like cooking. Luckily, these delicious and easy recipes use no heat at all. Try my Tuna Waldorf Salad, Artichoke and Chickpea Salad, and Mini Hero Sandwiches. Your family will never know you're avoiding the oven!

Sandwiches are so satisfying to eat. When I was little, I had the 'nothing can touch anything else on my plate' syndrome, so I wouldn't even try sandwiches. Luckily, I grew out of that! Now I love sandwiches at any time of day. This recipe uses chicken cutlets, which are very thin pieces of chicken, that are breaded and cooked until crisp and golden. Pile on the tomatoes, lettuce, and mustard please! Serve with a nice fresh fruit salad and a delicious peach dessert for a satisfying lunch or dinner. I've always loved all kinds of seafood, especially shrimp and salmon. And since nutritionists recommend that we eat at least two servings of fatty fish a week, I'll happily oblige! Salmon prepared any way is just great with me. I love to poach it in the crockpot, grill or broil it, or bake it to tender and juicy perfection. These simple and quick ways of cooking salmon are so good you'll have a hard time limiting yourself to just two times a week!

Mom's Easy Cooking - Fast Meal Ideas For Busy Moms

Every busy mom worries about how to prepare fast, nutritious meals for her family. Working moms often find they have very little time for meal planning and preparation. After a long day at work, the last thing on your mind is spending an hour or more cooking and cleaning up afterwards. A little advance preparation and some creative menus are all you need to make mealtime less stressful. You will save a lot of time and energy if you plan an entire week's meals in advance, and do your shopping all in one trip instead of making several trips to the grocery store each week.

A simple online search will give you some great recipes and meal ideas, most of which you can prepare in less than fifteen minutes. You will be able to find delicious recipes for family favorites such as spaghetti, meatloaf, and stroganoff, all of which can be partially prepared in advance, saving you valuable time in the evenings. Most busy moms worry about nutritious, fast breakfasts. Consider keeping frozen waffles, yogurts, cereal, and microwave items such as Hot Pockets on hand to save precious time in the mornings and still send your kids off to school with a good breakfast.

If your children take their lunch to school, prepare them the night before. You will have more time to make sure your kids are taking nutritious lunches and you will save yourself a lot of time and hassle in the mornings. Lunch items can include vegetable sticks, fruit snacks, cheese, crackers, and convenient juice boxes. Your kids will love the variety and will often be able to prepare their own lunches for the next day.

If you want to save additional time in the evenings, try cooking in a Crockpot. You can cook meat and vegetables in one convenient location, and the best part is your food will be ready when you get home. Your family will love coming home to the smells of delicious Crockpot meals that have been cooking all day. Another helpful idea would be to purchase a bread machine with a timer. You can place the ingredients in the bread machine and set the timer so that the bread will be ready upon your return home from your busy day.
