Chili: Beans or No Beans?
10 Mar 2010 at 7:00pm
The experts and chili cook-off participants are adamant on the issue: No beans in chili! Do you like beans in your chili? If yes, what type of beans? What type of meat do you use? Beef and pork are favorites at the cook-offs, but you are only limited by your imagination. Some prefer ground beef, others swear by chunks of meat. Venison and chicken chilis are now quite popular. Spicy or not? Tell us what you think.

Grand Marnier Raisin Gingerbread Bars Recipe
9 Mar 2010 at 7:00pm
These gingerbread bars have a slight kick, but are not overly sweet. They go well with coffee, cappuccino or espresso. Plan ahead to let the raisins soak in the liqueur before beginning. If you cannot use the liqueur or do not have any on hand, substitute orange juice.

Pork Loin Recipes

Do not confuse pork loin with pork tenderloin. Pork loin is not as tender, but makes a wonderful boneless roast. It may also be sliced into boneless chops. Whole boneless pork loin is fairly inexpensive when it comes to meat. The warehouse stores sell it for less than $2 per pound. I like to buy the whole loin and cut it in half. One half is used as a roast. The other half is sliced into 1-1/2-inch thick pork loin chops. Pound the chops down to a 1-inch thickness, re-shape, then individually wrap to freeze. Always let meats thaw slowly in the refrigerator so it re-absorbs its juices. Try these pork loin recipes.

Fuzzy Navel Cake Recipe
5 Mar 2010 at 7:00pm
If you like fuzzy navel cocktails, you will love this cake made with peaches, cherries, and peach schnapps. It makes an attractive presentation on the table. This traditional recipe made the rounds in the 70's, along with Harvey Wallbanger Cake. You can glaze it or not. Glazing gives even more visual appeal, but it is just as delicious without.

Teriyaki Skirt Steak
3 Mar 2010 at 7:00pm
The most popular recipe for skirt steak is fajitas. Branch out from traditional fajitas and try this recipe using a homemade teriyaki sauce. Take care not to overcook the skirt steak. It should be medium-rare, or at the least no more than medium. Otherwise, it will be dry and chewy. It is also very important to slice this cut of beef across the grain to avoid a stringy texture.

Apple Mashed Potatoes Recipe
28 Feb 2010 at 7:00pm
These mashed potatoes are delightfully different. The apples add a hint of sweetness to the potatoes, yet the savory flavors of the herbs still shine through. Sour cream gives a rich creamy texture, but remember, you want these mashed potatoes chunky, not smooth. Apple mashed potatoes are especially good with pork.

Apple Cake Recipe
27 Feb 2010 at 7:00pm
This apple cake uses fresh apples, walnuts, and optional raisins. The texture is dense, much like a quick bread. Use a simple drizzled glaze or serve it plain. It is a 9 x 13-inch cake, so it makes enough for a crowd.
