Make vegetarian stuffed tomatoes with a simple pesto and bread crumb stuffing mixture. Use a homemade vegan pesto recipe to make these easy stuffed tomatoes vegan as well as vegetarian. These could be either a light and healthy vegetarian main dish or a vegan appetizer or hors d' oeuvres. My friend Ben likes to think of these as little tomato cupcakes topped with a pesto frosting.

Simple squash side dish 6 Mar 2010 at 12:23am
Butternut squash is so naturally flavorful that it needs little enhancement once cooked. This simple recipe, with just four ingredients, makes a sweet and salty side dish that taste so good you'd think you were eating candy. Add sauteed tofu and perhaps some lightly wilted spinach to make it an entree served with rice or another whole grain, or, make the recipe as is for a simple and understated yet delicious side dish.

Penne pasta with sun-dried tomatoes and walnuts 2 Mar 2010 at 11:06pm
Hello, my name is Jolinda, and I'm a carboholic. But I don't mind. In fact, I love it! Pasta, though not particularly nutritious, has long been one of my favorite foods. These days, I use whole wheat noodles or even tofu noodles as much as possible. This penne pasta with sun-dried tomatoes is a rich and filling way to add some protein to your carb fix. Sun-dried tomatoes carry the intense flavor, walnuts add a rich texture, and the tofu adds a creamy ricotta-like quality to this vegetarian and vegan pasta entree. Two reviewers have given this recipe their stamp of approval. Bon appetit!

Polenta for breakfast 28 Feb 2010 at 1:17am
I like to eat a creamy quick homemade vegan polenta for breakfast because I often have cornmeal and the other vegan polenta ingredients on hand. Add as much vegan margarine as you'd like, if you're not worried about your vegan polenta being low-fat. But you know me, I like to pile on the nutritional yeast for extra flavor, and sometimes I add a dash of onion powder or cayenne pepper to pick it up a bit too. Polenta has been one of my favorite breakfasts lately! Plus, cornmeal is super cheap at most grocery stores, and a little bit goes a long way. What's not to love?

Vegetarian Enchiladas 25 Feb 2010 at 12:21am
If you need an easy and nutritious full vegetarian dinner, try making vegetarian enchiladas! These vegetarian and vegan mushroom enchiladas (pictured) do have a 20 minute baking time, but they take just about 15 minutes to get into the oven, leaving you time to make a side salad or do some pre-dinner ab crunches while they bake (not saying that's what I do, but you never know, it could happen!).

You might also like these black bean enchiladas, or, try these super-quick ten minute tofu enchiladas. Don't feel like filling and wrapping? Turn your enchilada filling into a layered enchilada casserole.

A vegetarian Purim 21 Feb 2010 at 11:24pm
Admittedly not being Jewish myself, I know very little about Jewish traditions and meals. Thankfully, About.com's Guide to Kosher Food, Giora, is a wealth of information about Jewish traditions, food, and the upcoming Jewish festival of Purim. According to Giora, many people celebrate by having a vegetarian Purim feast to honor Esther, the heroine of Purim. Tradition also dictates eating poppy seeds and Ethiopian food, such as lentils. So, with a little help from Giora, here's a few recipes to try this year for your vegetarian Purim.

Or, if you're lucky enough to live in New York City, join Sacred Chow (a vegan kosher restaurant with a fantastic name) in their Purim feast, and let someone else do the cooking, while you tackle the eating! Peanut butter coconut tofu: Love it or hate it? 18 Feb 2010 at 10:04pm
I love Brussels sprouts, and I'm ok with durian and kim chi, but I really don't like Japanese natto and vegetarian mock shrimp (ew!). Other than that, there's not too much that I won't eat - as long as it's vegan! Apparently, my tastes differ from others, because every once in a while, one of my favorite recipes receives a really bad review.

Two users have reviewed this recipe for Thai coconut tofu, and while Eric loved it and gave it 4 out of 5 stars saying, This was a great treatment. Not just great consistency, but with a lot of wonderful flavors! I definitely recommend.

another anonymous user gave it one star and detested it. She wrote:

Was so excited to make this. Neither me or my boyfriend could take more than a couple bites. Peanut butter tofu= not good.

Another reason to go vegetarian 16 Feb 2010 at 2:15am
Don't let this one keep you up at night with worry, but reader Karina Skye has a new reason to consider adopting a vegetarian diet. Fear of extra-terrestrial retaliation, of course! Here's what Karina wrote in to say:

I become vegan/vegetarian because animals shouldn't be eaten for our tastebuds. What if aliens come here, started chopping us up and eating us? We wouldn't like it and neither do animals. Everyone has a right to their lives, including animals!

I hadn't thought about that, Karina, but I can see the wisdom in "widening the circle of compassion" dictated by the Golden Rule to encompass animals as well as people and aliens. Which brings me to another philosophical quandary. If aliens tasted good, would you eat them? I wouldn't, of course, because I'm vegetarian. Omnivores, would you?

Vegan cookies storm Starbucks! 14 Feb 2010 at 2:32am
Vegans, celiacs and coffee lovers all have a reason to unite in sublime celebration: vegan cookies have arrived at Starbucks! The international coffee chain now offers vegan cookies at every single one of their locations nationwide in the US. Lucy's vegan cookies are gluten-free, making them safe for celiacs on a gluten-free diet, and they're safe for just about every food allergy you could imagine, and are kosher pareve certified. Everyone can eat these cookies, making it a brilliant move. Soy lattes and vegan chocolate chip cookies together at last! Did I mention they're mostly organic and trans-fat free? as well? There's four varieties available: chocolate chip, sugar cookie, oatmeal cookie and cinnamon.

Starbucks was one of the first national chains to offer soymilk as an option (even though there's an extra charge for it - booo!), so it makes them a leader in national chains offering vegan-friendly options. I can't wait to see what's next! Perhaps Subway will follow suit with eggless mayo and nondairy cheese. Or perhaps KFC will make my day by bringing their vegan chicken sandwich to the US.

Eat your way through Chinese New Year 12 Feb 2010 at 12:59am
Vegetarian dim sum has to be one of my favorite restaurant meals to enjoy with friends. I love sneaking a peak at the towers of bamboo steamers in the kitchen and all the little bowls of dipping sauce. Chinese New Year, then, is a great opportunity to indulge! It's a fantastic holiday, with vibrant dragon dances, colorful foods and decoration, and a rich tradition that still thrives in Chinese neighborhoods across the globe. Did I already mention the food? In celebration of the new lunar year (Chinese New Years), here are a few of my favorite Chinese vegetarian tidbits:

Vegan Scallion Pancakes In China, scallion pancakes are served up hot and piled high, fresh from street vendors. Chinese green onion pancakes are more of a snack or appetizer than a breakfast food, so enjoy them anytime. Serve plain or dipped in a good quality soy sauce. Though they have little in common, you might also want to try this recipe for red bean pancakes if you like Asian-style pancakes.

Vegetarian Chinese Dumplings One of the best meals I've ever had was at a small restaurant in Taipei, Taiwan. It included steamed dumplings very similar to these and dipped in a very simple soy sauce and vinegar dip. Serve hot with a good green tea.

Vegetarian Hot and Sour Soup My Chinese roommate in college used to prepare this for breakfast on occasion, and I heartily ate it up! It is somewhat light, however, so feel free to add in some tofu or seitan if you want a soup that is more of a meal.

Chocolate Dipped Fortune Cookies (pictured) I predict you will love this quick recipe, from Rhonda, About.com's Guide to Chinese food. Ok, so there's nothing traditional about it, but it is a fun idea!
